Strawberry Fields Salad

I love love love #strawberryseason! Once Memorial Day rolls around here in sunny San Diego, berry prices start to drop, flavors peak & I make this salad on repeat. The ingredients to this salad are super simple & fresh- but each contributes just the right aspect to the dish. Peppery arugula is balanced by creamy avocado, sweet strawberries & goat cheese are a match made in heaven + the candied walnuts just make the whole deal over the top. I'll typically bring this as a side dish to summer parties, if you'd like to feature it as a meal- grilled chicken would make a great protein addition, cooked quinoa or farro would work great tossed in the salad as well. If your feeding kiddos- I would deconstruct some of the ingredients and serve them separately, this makes the meal more approachable for a young palate. Enjoy the recipe below! Strawberry Fields Salad

Ingredients

  • 2-3 C Arugula

  • 1 Medium Avocado, Diced

  • 1 C Strawberries, Sliced

  • 1/4 C Candied Walnuts

  • 2 oz Goat Cheese

  • 1/4 C Oliva Oil

  • Squeeze 1 Lemon

  • 1 Shallot, Minced

Instructions

  1. Layer the salad ingredients (arugula, avocado, berries, walnuts & goat cheese)

  2. To prepare the dressing, combine olive oil, fresh lemon, minced shallots & salt/pepper to taste

  3. Toss salad to combine & enjoy!
