Easy Egg Bites {Quick + Portable Protein}

Eggs, also known as nature's perfect food, are packed with protein, choline and omega three fatty acids. This recipe pairs iron rich spinach with tomato, rich in vitamin C to boost iron absorption- however the toppings for these bites are really endless and you can mix and match according to your liking. Most women have a difficult time meeting their protein needs through a day and ESPECIALLY at breakfast. Starting off your day with 15+ grams of protein is especially helpful to help balance your hormones and boost your mood.

Once you make a batch of these bites, you can easily assemble breakfast sandwiches by placing an egg bite between a whole grain of your choice (think english muffin, whole grain toast or a tortilla) to have ready to warm up for early mornings or to pack up when on the go. I personally make a batch of these every week to have on hand for mornings for myself and my family since preparing proteins typically takes the longest when assembling a meal.

Ingredients 

6 eggs 

¼ c milk 

½ c cheese, shredded 

1 cup spinach 

1 roma tomato, chopped

¼ tsp salt and pepper



Directions

  1. Preheat oven to 350 degrees

  2. In a large mixing bowl whisk the eggs, milk and cheese together until blended 

  3. In a small pan, saute spinach and tomato together, add to eggs in mixing bowl and stir to combine 

  4. Spray a 12 cup muffin pan with cooking spray and pour mixture into cups, filling ⅔ of the way full 

  5. Place in oven and bake for 20 minutes until fully cooked
