Easy Snack Recipe: Roasted Chickpeas

The chickpea- I have to say, it is my favorite bean. I use it in salads, add it to soups, and of course, hummus! The chickpea is protein rich and is the perfect base to add whatever seasoning variations you like. Roasted them up and you have a protein + fiber packed snack that you can nosh on throughout the day.

These guys not only make a wonderful snack to munch on in between meals but also work great as a way to elevate salads, bowls and soups by adding a little bit of crunch!

Serves 4

Preparation Time, 5 minutes 

Cook Time, 25 minutes 

Ingredients 

1- 14 oz can garbanzo beans, rinsed and drained 

1 tb extra virgin olive oil 

1 tsp garlic powder 

½ tsp salt 

⅛ tsp paprika 

Ground pepper and cayenne as desired based on spice preference 

Directions

  1. Preheat oven to 400 degrees 

  2. In a bowl combine garbanzo beans, olive oil and spices and ensure all the beans are coated well 

  3. Distribute garbanzo beans evenly on a baked sheet and place in oven to bake 

  4. About halfway through baking time (~10-12 minutes) stir garbanzo beans to ensure they roast on all sides and continue baking for the remainder of time until they are dry and crispy on the outside

  5. Remove garbanzo beans from the oven and let cool. Garbanzo beans can be served warm or cooler and stored in a sealed container in the fridge.
